If the entire computer reboots, it's usually a hardware or driver problem. User space applications like P3D do not have the low-level access or permission to the system to invoke a reboot on their own. The Trim function in Process Lasso is snake oil. It only affects the working set, not the VAS usage.

You can verify this by monitoring offset 024C (S32) in the Logging tab of FSUIPC.

Bathymetry affects wave-height when using the highest (Ultra) water setting. Shallow waters will have smaller waves, while deep waters will have tall waves.

Can you post a screenshot or video?
Might be a driver issue, since some versions of Nvidia's drivers haven't been playing nice with P3D.
