Yes, this can be done using a program called EditVoicepack (https://editvoicepack.com/).
With this program you can add new or update exissting callsigns, ATC phrases, aircraft names (aircraft types), airport names, etc.

This has happened to me before. Try going in to the P3D settings and disabling your controllers (disable your Joystick) BEFORE you slew. The slew may be receiving input or spikes from the controller(s), thus causing the issue.
